  • Lead the day-to-day operations of the bar and restaurant, ensuring consistently high standards of service, quality and guest experience.
  • Take overall responsibility for the performance, profitability and smooth running of the business.
  • Lead, motivate and develop a diverse team, creating a positive, supportive and high-performing workplace culture.
  • Recruit, onboard, train and retain talented team members across all areas of the operation.
  • Set clear expectations and manage team performance through regular coaching, feedback and development.
  • Drive sales and maximise revenue through effective commercial planning, promotions and upselling initiatives.
  • Manage budgets, payroll, stock control, purchasing and cost management to achieve agreed financial targets.
  • Maintain excellent standards of food safety, HACCP, licensing, health & safety and legislative compliance.
  • Ensure consistently high standards of food, beverage presentation and service.
  • Build strong relationships with customers and respond professionally to feedback, complaints and opportunities to improve.
  • Lead by example, demonstrating a hands-on and visible management style during busy service periods.
  • Manage rotas and staffing levels effectively to meet business demands while supporting work-life balance.
  • Work closely with the kitchen and front-of-house teams to ensure seamless communication and service delivery.
  • Identify opportunities to improve operational efficiency, standards, customer experience and profitability.
