Become the Heart of Sally Mac’s - Baggot Street’s New Traditional Irish Pub & Kitchen

We are looking for a Bar Manager who will become the soul of Sally MacLennane’s, a proud, traditional Irish Pub & Kitchen in the heart of Baggot Street. This is a role for someone who sees hospitality as more than service: someone who understands the warmth, wit, welcome, standards, and character that make a great Dublin pub special. The right person will lead from the front, pour the perfect pint of Guinness with real pride, know how to make locals feel at home and visitors feel like they have found the real Dublin. Build a team that brings energy, pride, and personality to every shift.

With great comfort food, great music, match-day atmosphere from the Aviva and RDS, and a beautifully refurbished Georgian setting, Sally Mac’s needs someone who will treat the pub as if it were their own, setting the tone, lifting the room, and making sure every customer leaves their worries at the door.

Salary: €50,000 - €55,000 DOE plus tips & service charge

Key Responsibilities

  • Proven leadership experience with the ability to motivate, develop, and manage a small team.
  • Help lead and launch the re-opening period, assisting in building a team to ensure we put Dublin’s new local on the map
  • Provide a truly Irish hospitality experience to all customers who come through the door
  • Strong interpersonal and communication skills with both customers and colleagues.
  • Ensure efficient service during busy trading periods
  • Manage stock control, ordering, and minimise wastage
  • Highly organised with strong attention to detail and a hands-on management style
  • Work closely with the owners to develop the pub’s atmosphere, drinks offering, and customer experience
  • Ensure compliance with licensing laws and health & safety regulations

Requirements

  • Minimum 3–5 years’ experience managing a busy Dublin city-centre pub or similar high-end venue
  • A strong passion for the Dublin Pub experience
  • Previous management experience behind a busy bar
  • Friendly, approachable, and a natural ease and openness when talking to customers
  • Ability to remain calm and organised under pressure
  • Excellent knowledge of beers, spirits, cocktails, and cellar management

  • Fluent English essential
