Assistant Restaurant Manager – DÍON

Opening late November.

As we prepare to open our doors, we’re searching for Assistant Restaurant Managers to help us shape the guest experience from day one. This is an opportunity to join a brand-new team, grow with us, and be part of something special in Dublin’s dining scene.

The Role

As Assistant Restaurant Manager, you’ll be at the heart of our operation – leading from the floor, driving service standards, and ensuring every guest leaves with a story to tell. You’ll support our senior management team while mentoring and motivating our front-of-house staff to deliver seamless, high-energy service.

Key Responsibilities

  • Lead and oversee floor operations during service, ensuring a smooth flow and exceptional guest experience.
  • Support in the training, coaching, and development of our floor and back of house teams.
  • Liaise with Front of House to manage reservations and special bookings, working closely with the host desk to ensure organisation and communication.
  • Maintain the highest standards of service, cleanliness, and atmosphere across the restaurant and bar.
  • Ensure compliance with health & safety, licensing, and company procedures.
  • Take an active role in upselling and driving revenue through guest engagement and service excellence.
  • Handle cash and payment procedures with accuracy and responsibility.
  • Be the on-the-floor go-to for the team, solving issues in real time and leading by example.

About You

  • You have at least 2 years’ experience in a similar management role within a high-volume, premium restaurant.
  • You’re a natural leader who thrives in fast-paced environments and motivates those around you.
  • You’ve got excellent organisational and communication skills, with a keen eye for detail.
  • You’re passionate about food, cocktails, wine, and creating memorable hospitality moments.
  • You’re calm under pressure, adaptable, and love being on the floor during a busy service.
  • You’re ambitious, professional, and ready to be part of building something new.
