Catering & Events Manager

Hours: Predominantly weekday, daytime hours — flexibility required for events

About the Role

O'Flynn's Gourmet Sausage Company — one of Cork's most recognised food brands and a fourth-generation family business — is looking for an experienced Catering & Events Manager to lead our Corporate, Events & Festivals (CEF) catering operation.

This is an ideal opportunity for a head chef or senior chef who wants to step into a leadership role with real ownership, without the relentless late nights and weekend-heavy schedule of kitchen life.

Our Product

All of our events menus are built around O'Flynn's gourmet sausages — made in our own Wilton production facility, to standards we control from end to end. Our menus are intentionally tight and efficient: focused on quality, speed, and consistency rather than complexity.

You'll need to know our product inside out, take real pride in it, and represent it with confidence at every event.

Working Hours & Schedule

While the majority of working hours will fall Monday–Friday, the role requires flexibility to work full weekends during our regular festival and event schedule, as well as occasional ad hoc weekend days and evenings throughout the year.

Salary & Benefits

  • €42,000 – €48,000 per year, depending on experience
  • Bonus opportunity based on agreed revenue targets for the events and festivals side of the business

Key Responsibilities

  • Plan and manage the CEF events calendar — bookings, scheduling, and revenue forecasting
  • Develop and refine menus centred on our gourmet sausage range
  • Manage food costs, procurement, and event budgets
  • Lead, train, and inspire a small catering team to the highest standards
  • Own food safety and HACCP compliance across all events activity
  • Build and maintain client relationships — corporate accounts, festival organisers, sports venues
  • Work with our Sales and Marketing team to bring in new leads and customers to grow the events and festivals side of the business
  • Champion O'Flynn's brand, culture, and values at every event
  • Work closely with our Production and Operations teams

What We're Looking For

  • Background as a head chef, senior sous chef, or experienced high-volume catering professional
  • Strong HACCP and food safety knowledge — essential
  • Excellent organisational skills — managing a calendar, team, procurement, and clients simultaneously
  • Commercial awareness — food cost, margin, and revenue targets are second nature to you
  • A genuine passion for quality food and pride in representing a craft product
  • Strong leadership and team culture skills — you bring people with you
  • Full clean driving licence required; van driving experience preferred

About O'Flynn's

We've been making gourmet sausages in Cork since the 1920s. Today we operate three city centre restaurants (English Market, Western Road, and Winthrop Street), a production facility in Wilton, and a wholesale operation with national reach. Our Corporate, Events & Festivals strand is a key growth area and we're looking for the right person to own it.
