Barberstown Castle 4 star Hotel are currently recruiting an experienced Pastry Chef to join our established Culinary team.

Reporting to the Executive Head Chef, this full time position is 37.5 hours per week, requiring flexibility in working days.

Key Responsibilities include but are not limited to:

  • Prepare and produce a variety of pastries, cakes, breads, desserts, and other baked goods for all restaurants and functions, ensuring consistency and high-quality standards at all times.
  • Support the pastry section efficiently, overseeing the preparation and presentation of all pastry items.
  • Ensure all pastries and desserts are presented beautifully and according to the hotel’s style and standards.
  • Assist in developing and creating new dessert items for menus, working with the Head Pastry Chef and Executive Head Chef to ensure variety, quality and seasonal relevance.
  • Maintain cleanliness, organisation, and proper hygiene in the pastry section, adhering to all health and safety regulations and HACCP procedures.
  • Monitor stock levels for the pastry section and work with the kitchen team to ensure adequate supplies and minimise waste.
  • Manage mise en place for the pastry section and prepare ingredients in advance to ensure smooth service during busy periods.
  • Ensure all food products are stored correctly and safely to maintain freshness and quality while assisting with inventory control and ordering ingredients for the pastry section as required.
  • Ensure compliance with food safety and hygiene standards, including correct food storage, handling, and waste management.
  • Contribute to the overall kitchen operations and support the Head Pastry Chef and Executive Head Chef as needed.
  • Ensuring all dishes are prepared and presented to exceptionally high standards.
  • Supporting the kitchen team to ensure excellent HACCP practice is observed at all times.

The ideal candidate will be well versed in culinary arts with a passion for sweet creations and:

  • Have 3 years experience in a similar role in a busy hotel kitchen.
  • Demonstrate the ability to work well under pressure and as part of a team.
  • Be flexible, adaptable and be able to demonstrate culinary and pastry innovation.
  • Bring their passion for pastry to the role.
