An Indian Tandoor Chef is responsible for preparing and cooking authentic tandoori dishes while maintaining high standards of taste, presentation, hygiene, and kitchen safety.

Typical responsibilities include:

  • Preparing and cooking dishes in a traditional tandoor oven, including tandoori chicken, chicken tikka, lamb tikka, seekh kebabs, fish tikka, paneer tikka, naan, roti and other breads.
  • Preparing marinades using yoghurt, spices, herbs and other ingredients according to restaurant recipes.
  • Marinating meats, poultry, seafood and vegetables for the required time to achieve consistent flavour and tenderness.
  • Operating, heating and maintaining the tandoor safely and ensuring the correct cooking temperature.
  • Preparing different varieties of naan, including plain naan, garlic naan, butter naan and stuffed naan.
  • Ensuring all tandoor dishes are cooked consistently in terms of taste, texture, portion size and presentation.
  • Checking the quality and freshness of meat, vegetables, dairy products, spices and other ingredients before use.
  • Managing mise en place and ensuring sufficient preparation for lunch and dinner service.
  • Coordinating with curry chefs, starters chefs and other kitchen staff during busy service periods.
  • Following recipes, portion-control procedures and presentation standards established by the Head Chef.
  • Monitoring food stock and informing the Head Chef or Kitchen Manager when ingredients need to be reordered.
  • Minimising food waste and ensuring ingredients are stored correctly using FIFO procedures.
  • Maintaining cleanliness of the tandoor area, preparation surfaces, equipment and utensils.
  • Following HACCP, food hygiene, allergen-management and health-and-safety procedures.
  • Preventing cross-contamination between raw and cooked foods and between allergen-containing ingredients.
  • Assisting with receiving and checking food deliveries where required.
  • Training junior chefs and kitchen assistants in tandoor cooking, preparation and safe working practices.
  • Supporting menu development and introducing new tandoori dishes or specials when requested.
  • Carrying out any other reasonable kitchen duties assigned by the Head Chef or Restaurant Manager.
