Full job description

We are looking for an experienced South Indian Cuisine Chef with excellent knowledge of authentic South Indian cooking and strong expertise in preparing high-quality Dosa, Madras Biryani, South Indian Sweets and Savouries.

Key Responsibilities

  • Prepare authentic South Indian cuisine to a consistently high standard.
  • Prepare a wide variety of Dosa, including Plain Dosa, Masala Dosa, Mysore Masala Dosa and speciality dosas.
  • Manage the complete Dosa batter preparation and fermentation process, ensuring consistent texture, flavour and quality.
  • Prepare authentic Madras Biryani, including Chicken Biryani, Lamb/Mutton Biryani and Vegetable Biryani.
  • Strong knowledge of traditional Madras Biryani preparation, including rice preparation, meat marination, spice balancing and cooking techniques.
  • Ensure consistent Biryani flavour, aroma, rice texture, meat tenderness and portion sizes.
  • Prepare traditional South Indian tiffin dishes, including Idli, Vada, Uttapam and Pongal.
  • Prepare authentic Sambar, Rasam, Chutneys and traditional accompaniments.
  • Prepare a range of South Indian vegetarian and non-vegetarian curries.
  • Prepare traditional South Indian sweets, such as Mysore Pak, Kesari, Payasam, Laddu and other regional specialities.
  • Prepare traditional South Indian savouries and snacks, such as Murukku, Mixture, Pakoda, Bonda, Bajji, Masala Vada and other speciality items.
  • Prepare sweets and savouries for festivals, celebrations, catering and special occasions as required.
  • Prepare marinades, masalas, spice blends, chutneys and sauces from scratch.
  • Maintain consistency in recipes, portion sizes, presentation and overall food quality.
  • Organise and manage daily mise en place to ensure smooth and efficient service.
  • Monitor the freshness and quality of ingredients and finished dishes.
  • Assist with developing new Dosa, Madras Biryani, South Indian dishes, sweets and savouries for the menu.
  • Maintain appropriate stock levels and assist with ordering and inventory control.
  • Minimise food waste through proper preparation, portion control and stock rotation.
  • Ensure correct storage, labelling and handling of all food products.
  • Maintain a clean, organised and hygienic kitchen at all times.
  • Follow all HACCP, food safety, hygiene and allergen procedures.
  • Work efficiently and maintain quality standards during busy service periods.
  • Coordinate effectively with other chefs, kitchen assistants and front-of-house staff.

Pay: €37,000.00-€37,500.00 per year
