About The Oak Room

There has never been a more exciting time to join our team, and we are delighted to be recruiting for a Head Waiter for our Michelin Star restaurant, The Oak Room.

The Oak Room is our signature dining venue, open exclusively for dinner service. This beautifully oak‑panelled space, complete with an adjoining private dining room, welcomes both residents and non‑residents. Our menu is a celebration of the very best produce gathered from our travels across the island of Ireland.
Head Chef Michael Tweedie and his talented team cook with restraint, seasonality, and purpose-delivering exceptional dishes in one of Ireland's most magical settings. We proudly collaborate with a close-knit family of producers whose craft sits at the heart of our polished yet relaxed dining experience.

Role Overview

As Head Waiter, you will play a pivotal role in delivering warm, intuitive, and memorable service in a Michelin‑starred environment. You will embody the character and charm of The Oak Room, engaging naturally with guests while upholding the highest standards of fine dining hospitality.

Key Responsibilities

  • Deliver exceptional, engaging, and personalised service to all guests.
  • Lead by example on the restaurant floor, ensuring service excellence throughout dinner service.
  • Communicate menu knowledge confidently, including dishes, ingredients, and cooking techniques.
  • Provide guidance on wine pairing and maintain strong product knowledge across our beverage programme.
  • Support the Restaurant Manager and team to create a polished, welcoming, and relaxed dining journey.
  • Uphold meticulous standards of presentation, cleanliness, and organisation.
  • Build rapport with guests, anticipating needs and enhancing their overall dining experience.
  • Assist with training and mentoring junior team members.
  • Liaise closely with the kitchen team to ensure seamless service delivery.

Candidate Requirements

  • Immaculately presented, personable, and naturally engaging.
  • A genuine passion for fine dining, guest service, and culinary excellence.
  • Exceptional attention to detail and strong organisational skills.
  • Wide knowledge of wines, pairings, and classic & contemporary dishes.
  • Previous experience in a similar role within a fine dining or Michelin-starred environment is highly desirable.
  • A positive, team‑focused attitude with a commitment to continuous learning.
