Position: Assistant Restaurant Manager
Location: 45 MacCurtain Street, Co. Cork
Start Date: Week Commencing 3rd August 2026.

Following the success of our award-winning Salty Dog Restaurant in Ballycotton, we're excited to bring the brand to the heart of Cork City with the opening of Salty Dog Ballycotton Cork on MacCurtain Street this August. We are currently seeking an enthusiastic and experienced Assistant Restaurant Manager to join our brand new team.

The Role

We're looking for a passionate and experienced Assistant Restaurant Manager to support the Restaurant Manager in leading the day-to-day operations of the restaurant while delivering outstanding guest experiences.

As Assistant Restaurant Manager, you will play a key leadership role in ensuring the smooth running of the restaurant, maintaining exceptional service standards, developing the team, and driving operational excellence. You will act as the Restaurant Manager's second-in-command and confidently lead the operation in their absence.

Key Responsibilities

  • Support the Restaurant Manager with the overall day-to-day operation of the restaurant.
  • Take responsibility for the restaurant in the Restaurant Manager's absence.
  • Lead, motivate, supervise, and develop the front-of-house team to deliver outstanding guest experiences.
  • Deliver exceptional customer service and ensure every guest has a memorable experience.
  • Assist with recruitment, onboarding, training, coaching, and performance management of team members.
  • Support staff scheduling, labour planning, and daily operational organisation.
  • Monitor labour costs and assist in achieving payroll targets.
  • Assist in stock control, ordering, inventory management, and reducing wastage.
  • Assist with cash handling, end-of-day reconciliation, and operational reporting.
  • Ensure company standards, procedures, and presentation are consistently maintained.
  • Oversee opening and closing procedures.
  • Handle guest feedback professionally and resolve issues efficiently.
  • Assist in achieving financial and operational targets, including sales, labour, and cost control.
  • Maintain high standards of cleanliness, food safety, health & safety, and licensing compliance.
  • Work closely with the kitchen and bar teams to ensure seamless service.
  • Lead by example, creating a positive, professional, and high-performing working environment.
