About Farringtons Mill & Brewery
Farringtons Mill & Brewery sits on a beautiful 30-acre organic farm in Rathcoffey, Co. Kildare. We are seeking an ambitious and passionate Head Chef whose love for food will drive national and international recognition.
We farm our own beef, pork and vegetables, and see this as being at the very heart of truly great food. In return, we will give you the scope to take the business in as ambitious a direction as you dare — and to bring your own instinct, learning and vision to bear.
This position offers a four-day working week, with Thursday consisting of kitchen preparation during the day and evening service, followed by full service on Friday, Saturday, and Sunday.
Key Responsibilities
- Lead and manage all aspects of the kitchen operation, ensuring consistently high standards of food quality, presentation and service.
- Develop creative, seasonal menus that showcase the exceptional organic produce grown on the farm, while bringing fresh ideas, exciting flavours and a variety of cuisines to continually enhance the dining experience.
- Lead, motivate, mentor and develop the kitchen team, fostering a positive, collaborative and high-performing working environment.
- Oversee all food preparation and service, ensuring efficiency, consistency and exceptional standards during every service.
- Work closely with the owners to shape and evolve the food offering, continually enhancing the guest experience.
- Adapt dishes to accommodate dietary requirements, including coeliac, dairy-free, vegan, vegetarian and other allergen requests.
- Manage stock levels, supplier ordering, food costs and waste control to maximise efficiency and profitability.
- Ensure full compliance with HACCP, food hygiene and health and safety regulations.
- Prepare staff rotas and organise kitchen operations to ensure the smooth day-to-day running of the kitchen.
- Maintain the highest standards of cleanliness, organisation and professionalism throughout the kitchen.
- Lead by example with a hands-on approach and an unwavering commitment to exceptional food and service.
About You
The ideal candidate will:
- Have previous experience as a Head Chef, Sous Chef or Senior Chef in a quality kitchen.
- Be passionate about fresh, seasonal, locally sourced food and committed to delivering an exceptional dining experience.
- Have strong leadership, communication and people management skills.
- Thrive on creating innovative menus and introducing exciting new dishes and culinary influences.
- Have excellent organisational and time management abilities.
- Remain calm and composed under pressure.
- Possess strong knowledge of modern culinary techniques, baking and pastry.
- Have a thorough understanding of HACCP and food safety legislation.
- Be reliable, hardworking and committed to the highest standards.
