Hugo's Restaurant is an award-winning, independently owned restaurant in the heart of Dublin, celebrated for exceptional food, genuine hospitality, and consistently outstanding service. For nearly two decades, we have built a loyal following of local diners, international visitors, and a significant corporate and government clientele who choose Hugo's for business lunches, client entertainment, departmental dining, and special occasions.

Our menus are built around seasonal ingredients sourced directly from small farms, artisan producers, and family-run suppliers across Ireland. We are seeking an experienced, dynamic, and hands-on General Manager who will lead our team, uphold our reputation for excellence, and continue to grow the business while delivering an exceptional guest experience.

The Role

As General Manager, you will have overall responsibility for the successful day-to-day operation of Hugo's Restaurant. You will be the driving force behind service standards, team development, financial performance, and guest satisfaction, ensuring every customer receives the warm, professional experience that Hugo's is known for.

You will work closely with the Owner, the Head Chef, and the Financial Controller to continue developing the restaurant while maintaining the personal service, attention to detail, and standards that has defined Hugo's for many years.

Key Responsibilities

  • Lead all aspects of the restaurant's daily operations.
  • Deliver exceptional hospitality and maintain the highest standards of customer service.
  • Build, mentor, and inspire a professional, motivated front and back-of-house team.
  • Recruit, train, coach, and develop employees while fostering a positive and collaborative workplace culture.
  • Manage staff scheduling, labour costs, and operational efficiency.
  • Work alongside the Head Chef to ensure seamless service and outstanding food quality.
  • Maintaining and developing our wine list, and relationships with our wine suppliers.
  • Develop and strengthen relationships with our loyal corporate clients, government departments, embassies, professional firms, and regular guests.
  • Support business development initiatives and identify opportunities to grow corporate dining, private events, and repeat business.
  • Monitor budgets, profitability, stock control, and key financial performance indicators.
  • Ensure full compliance with food safety, licensing, health & safety, and employment legislation.
  • Handle guest feedback with professionalism and ensure every visit exceeds expectations.

About You

You are an experienced hospitality professional who combines strong commercial awareness with a genuine passion for people and exceptional food.

You will ideally have:

  • At least 5 years' senior management experience in a high-quality restaurant or hospitality environment.
  • A proven track record of leading successful teams and delivering exceptional guest experiences.
  • Experience managing premium corporate dining and high-profile clientele.
  • Strong financial and commercial management skills.
  • Outstanding leadership, communication, and organisational abilities.
  • A genuine appreciation for Irish food, seasonal produce, and sustainable sourcing.
  • Strong wine knowledge, working with local suppliers to provide a robust yet friendly list. We serve over 50 wines by the glass.
  • The confidence to build relationships with business leaders, government departments, diplomatic guests, and long-standing customers.
  • A calm, positive, hands-on approach and the ability to thrive in a busy service environment.
