Chef de Partie – Tapas Specialist

Employer: Aces Lounge Castletroy Limited (also trading as ACES Limerick)

Location: ACES Limerick, Unit 7B, Castletroy Park Retail Park, Castletroy, Limerick, V94TKD3
Salary: €36,605 per annum
Hours: 39 hours per week

Job Responsibilities

  • Support the Head Chef and Sous Chef in the day-to-day running of the kitchen.
  • Take primary responsibility for the preparation and execution of tapas/small plates dishes (and desserts when needed), ensuring consistency, presentation, and flavor.
  • Assist with other kitchen stations as needed to maintain service flow.
  • Maintain high culinary standards in line with the restaurant’s brand and ethos.
  • Adhere to HACCP guidelines and ensure all food safety and hygiene protocols are followed.
  • Monitor mise en place, stock rotation, and assist with inventory management.
  • Collaborate on menu development and seasonal offerings.
  • Work efficiently in a fast-paced environment while maintaining cleanliness and organization.

Requirements

  • Minimum 2 years of experience as a Chef de Partie or equivalent in a professional kitchen.
  • Proven experience and passion for food and cooking, with an understanding of Mediterranean and international flavor profiles.
  • Ability to work as part of a team and take initiative in a busy kitchen.
  • Strong attention to detail and commitment to quality.
  • HACCP certification and working knowledge of food safety practices.
  • Availability to work evenings, weekends, and public holidays.
