Chef Manager

ESB Ballycoolin – Full time

At Sodexo, we're looking for an experienced Chef Manager to lead the catering operation at ESB Ballycoolin. You'll be the main point of contact for Sodexo catering on site, taking responsibility for the day-to-day operation and ensuring consistently high standards across food quality, service, food safety and customer experience.

This is a hands-on management role where you'll combine your culinary expertise with strong organisational and people skills. You'll work closely with the catering team, client and customers to deliver an efficient, professional service while identifying opportunities to develop menus, improve the customer experience and drive continuous improvement.

What you'll do:

• Lead the day-to-day catering operation, ensuring service is delivered to agreed standards, specifications and performance targets
• Work hands-on in the kitchen, supporting daily food preparation and developing food concepts, promotions and healthy eating options
• Plan and cost menus using Sodexo systems, ensuring menus meet the agreed food offer and budget
• Manage ordering and stock control through nominated suppliers
• Monitor food costs, labour, expenses and stock to ensure the operation remains within agreed budgets
• Ensure HACCP, food safety, hygiene, health and safety, fire and COSHH standards are consistently maintained
• Ensure food is prepared, portioned and served at the correct temperatures and to the required standards
• Oversee deliveries, ensuring goods are checked for quantity, quality and temperature before being correctly stored and rotated
• Plan work schedules to ensure adequate kitchen cover and make effective use of team skills
• Support and develop the catering team through regular training, including food hygiene and craft training
• Maintain high standards of cleanliness, presentation and personal hygiene across the kitchen and catering areas
• Ensure kitchen equipment is regularly checked, safe to use and any faults are reported and addressed
• Build positive relationships with the client, customers and catering team, providing a professional and welcoming service
• Respond to customer feedback, complaints and compliments in line with Sodexo procedures
• Support special functions and ad hoc events, including occasional requirements outside normal working hours
• Identify opportunities for continuous improvement, promotions and initiatives that support the growth of the contract

What you'll bring:

• Proven experience in a similar Chef Manager role, preferably with at least 2 years' experience
• Professional cookery qualification such as 7061/7062 or equivalent
• Strong knowledge of the catering/service industry and the importance of excellent customer service
• Experience planning and organising catering operations effectively
• Strong knowledge of HACCP, food hygiene and health and safety requirements
• Good commercial awareness, with the ability to manage food costs, stock and budgets
• Excellent people and communication skills, with the ability to build and develop a strong team
• A hands-on approach and genuine passion for food and catering
• The ability to work efficiently, remain organised and adapt to changing operational requirements
• A consistent, flexible and customer-focused approach
• HACCP/Supervising Food Safety training would be desirable
• IOSH certification would be desirable
• Previous people management experience and knowledge of good HR practices would be desirable
