Full job description

Temporary Pizza Chef required for a pizza restaurant in Co. Kildare. The right person must have experience working with wood-fired pizza ovens.

As our wood fire Pizza Chef, you will be right in the heart of our kitchen. This is not a conveyor-belt pizza role; it is a craft. You will be solely responsible for managing the fire, stretching the dough by hand, and ensuring every single pizza that leaves the oven meets our high standards of quality, flavor, and presentation.

Key Responsibilities

  • Oven & Fire Management: Build, light, and maintain the wood fire, managing temperatures throughout service to ensure even cooking and perfect charring.
  • Dough Mastery: Prepare, portion, and proof dough according to our specific hydration recipes. Hand-stretch dough quickly and consistently (no rolling pins).
  • Station Setup & Prep: Prep high-quality toppings, sauces, and cheeses. Keep your station meticulously organized and hygienic.
  • Speed & Quality: Spin, top, peel, and launch pizzas efficiently, maintaining a fast pace during peak service hours without sacrificing presentation.
  • Oven Maintenance: Clean, ash, and maintain the wood-fired oven daily, ensuring safe operation and longevity of the stone hearth.

What We Are Looking For (Requirements)Absolute Must-Have: Proven, hands-on experience working with a live-fire wood oven. You must understand the physics of wood-fired heat, dome vs. deck temperatures, and how to rotate pizzas for an even bake.

  • Experience: Minimum of 1 years working as a Pizza Chef in a fast-paced, high-volume environment.
  • Skills: Masterful dough stretching (by hand) and peel work (launching and turning).
  • Knowledge: Deep understanding of dough fermentation, temperature control, and ingredient prep.
  • Attributes: High energy, a calm head under pressure, and a strong eye for detail. You take pride in consistency.
  • Safety & Hygiene: Excellent food safety practices (HACCP/local food handler certifications preferred).

Pay: €14.15-€18.00 per hour
